150-gram Organic green veg Cai xin on the left was kept in fridge on 2013-09-21 and was taken out at 640 pm on 2013-09-30. On the right is the same veg after rinsing with tap water and weighed 230 grams before just blending with fruits

My 5th homemade bread baked with Zojirushi bread maker model BB-HAQ10. Date: 2013-09-29.Type: Regular basic white bread. Baking completed at 11.05 pm. Cooling will be one hour before packing for eating tomorrow.

Results: Look good! 






Bob's Red Mill 10-Grain Bread Mix bought for the first time on 2013-09-28 (to be used an ingredient of Zojirushi BB-HAQ10 Bread Maker)

Bob's Red Mill natural foods at Paragon Market Place, Singapore.

As at the time of this post, there is a small section of Bob's Red Mill natural foods at Paragon Market Place, Singapore. 

Recommended no. of servings of fruits and vegetables an adult should eat everyday

According to http://www.mayoclinic.com/health/dash-diet/HI00048 , an adult needs to eat 4 to 5 servings of fruits and 3 to 5 servings of vegetables a day.

According to http://www.hpb.gov.sg/HOPPortal/article?id=2758 , an adult should aim to eat at least 2 servings of fruit and 2 servings of vegetables a day.

One serving of vegetable weigh 80 grams. (Note: Some sources say one serving of vegetable weighs 100 grams).

The the organic green spinach below weighs 180 grams, i.e.about 2 serving of vegetable.

The problem is many people eat less than two to three servings of vegetable in a week.

On 2013-09-27 afternoon, I bought 2 packets of Prima brand WHOLEMEAL FLOUR (500g) at $3.20 each from Cold Storage (Centre Point) for the first time for my homemade bread baked by Zojirushi BB-HAC10 Bread Maker.

According to http://www.prima.com.sg/primaflour/household/prod_pr_flour2.htm ,  this wholemeal Flour is a high-protein high-fibre flour specially milled for the health-conscious. Just mix equal quantities of Prima's Wholemeal and Bread Flour to make delicious and nutritious wholemeal bread, buns and cookies.




According this webpage, the price at NTUC is $2.95 per packet.

During the baking of my send homemade bread, I used the plastic spatula to push the flour and ingredients stuck to the walls of the baking pan back to flour being kneaded during kneading. Of course, you need to open the lid for while. 

I guess the "pushing back " has helped to avoid the brownish stains on the vertical surfaces of the second bread. My first homemade bread had some brownish stains the vertical surfaces.

Introduction of the Ingredients
=======================
A bread maker, overall, does the exact same thing that someone making bread by hand would do. The obvious advantage is that it is all done for you without much effort or thought. The most important (and virtually only) step in how a bread maker works is the introduction of the ingredients into the bread maker. Bread making is more like a science experiment than cooking because if you don't put the exact right amount of a certain ingredient into the recipe, the whole thing won't work. Make sure you measure out the exact amount of flour, water, yeast, salt and any other ingredient before you put it into the bread maker to ensure it produces a satisfactory end product.

Mixing and Kneading
===============

Once the ingredients are in, a program is selected for the bread maker to follow. Most bread makers come with a certain number of set programs that are available at the touch of a button. The timing may be slightly different, but they all follow the same basic series of commands, the first being mixing and kneading. The bread maker will start by mixing the ingredients with its dough hook for a short amount of time, probably around two minutes. It will then let the dough rest for ten to fifteen minutes to develop it's gluten, then the dough hook will begin turning again, this time kneading the dough. This will last for five or six minutes.

Rising
======

The thermostat in your bread machine will raise the temperature slightly around the dough in your machine, allowing the bread to rise for the appropriate amount of time. Once it is done rising, the machine will immediately go into baking mode.

Baking
======
After rising, the microchip that controls the thermostat in your bread maker will, once again, raise the temperature. This time, though, it will be baking your bread. Your bread will bake for the predetermined amount of time programmed by you, and when it is done baking, the machine will shut itself off. Your bread will be cooled and ready to eat in thirty minutes to an hour.

My 2nd homemade bread baked with Zojirushi bread maker model BB-HAQ10. Date:  2013-09-23. Time: 7.08 am to 10.38 am. Basic bread - Regular variation. Type: basic White Bread . Crust : Light. Cooling 2 hours before packing for eating later. 

The bread was sliced at about 5.50 am on 2013-09-24. I made a sandwich with cheese for GG and one-slice cheese sandwich for TT at 7.45 am.

My Verdict
========

Compared with my first homemade bread, this second bread is better: Better looks. Thinner crust. Better formed. Better texture. Taste better. More like commercial bread although not as soft. In general, my second homemade bread is GOOD!
