Crispy Nuts and Seeds: Soaking and drying nuts and seeds reduces phytic acid and enzyme inhibitors which can prevent absorption of nutrients. Many nuts (walnuts, almonds, etc.) should be soaked overnight in salt water and then dried at no more than 150°F for 12-24 hours until nice and crispy. A bonus: Soaked and dried nuts and seeds often taste better.
