Buckwheat Basics

(1) Unhulled buckwheat still has their black outer hull. They are used for growing buckwheat greens (also called buckwheat lettuce).

(3) Hulled raw buckwheat groats are white and sometimes have a green tint. They are the ingredient used in many raw food recipes. Since they are raw, they are still viable and will sprout after soaking for just 15 minutes.

(3) Hulled roasted buckwheat are tan or brown and are also called Kasha, which is commonly used as a breakfast cereal and in cooked recipes.
