Fresh wheatgrass is rich in vitamins A, C, calcium, iron and enzymes, and especially good for cancer patients with low enzymaticactivities to restabilize the food. It helps normalize metabolism, for cleansing and rejuvenation.

Nature’s Glory wheat grain has one of the highest sprouting rate. 

Preparation : Wash and soak wheat grain for 6 hours. Drain water and cover in dark for about 1 day, until seeds start to root. During this time, wash 2-3 times a day. Then, spread seeds evenly on a tray (about 3 cm depth of compost) and sprinkle water. Cover with a moist paper towel and keep in a cool place for about 2 –3 days till sprouts appear. Keep paper towel moist. Place under indirect sunlight for about 7 days, watering once or 2x each day. Harvest as close to soil. Juice about 30 ml to drink each time 2-3 times a day. Cut grass last 7 days refrigerated.

Storage : Keep in cool, dry place.

My 2013-07-09 easy-to-make healthy and nutritious plant-based multi whole grains+nuts+seeds cereal (or called porridge) . 

14 ingredients: hard red wheat, rye, triticale, oat bran, oats, corn, barley, soy beans, brown rice, millet, buckwheat, almond, walnut and black sesame powder. Total net weight 150 grams. Energy: about 530 kcal. 

Added 2 cups of plain water and then cooked by microwave oven. 3 to 6 minutes only. 

No added sugar. No added salt. No added oil. 

Taste: Very good. You may add some  fresh fruits or dried fruits and any other ingredients.

Wholegrain cereals include wheat, rice, corn, oats, rye, barley and millet. Wholegrain cereals contain the three layers of the grain. 

Wholemeal foods are made from wholegrains which have been crushed to a finer texture. Nutritionally, wholegrain and wholemeal foods are very similar.

Examples of wholegrain cereals are:

Wholemeal or multi-grain bread, muffins and crumpets

Wholegrain or whole-wheat breakfast cereals or muesli

Wholemeal or mixed grain crisp bread

Brown rice, rice cakes

Wholemeal pasta

Corn, oats, quinoa, unpearled barley, millett or amaranth

Cracked wheat (bulgur)

Wholegrain cereals contain more fibre, vitamins, minerals and antioxidants than refined cereal foods such as white bread, because many of the important nutrients occur in the outer layer of the grain which is lost during processing.

"Bread has been getting a bad rap for a long time," says Shelley Case, RD, nutrition consultant and author of Gluten-Free Diet: A Comprehensive Resource Guide. "It's worse now because there's so much negative press about gluten, the protein found in wheat, rye, and barley." 

Some people cannot tolerate gluten because they have celiac disease. In celiac disease, the immune system mistakenly identifies gluten as dangerous, triggering a reaction that causes an attack on the body's own tissues. That damages tiny finger-like structures called villi in the intestines, making it hard to absorb nutrients from food. For people with celiac disease, avoiding any source of gluten -- found in many products besides bread -- is an absolute must.

Celiac disease is getting diagnosed more often these days. But many more people link their health problems, including stomach upset and fatigue, to gluten. A sensitivity to gluten, also known as gluten intolerance, may involve bloating, abdominal pain, and fatigue. But there aren't reliable medical tests for it.

It may be tempting to stop eating bread and other gluten-containing foods if you suspect they're bothering you. But it's important to first find out if you have celiac disease, and going gluten-free makes it harder to diagnose celiac disease, Case advises. If you're having symptoms that make you suspect that you can't tolerate gluten, tell your health care provider, and if you are considering going gluten-free, a registered dietitian can help you make sure you don't miss out on nutrients.

Today (2013-05-30),  while trying to find out the wheat I normally bought locally is whole grain or not, I came across the following. I this wheat a whole grain? Most probably because it can sprout.

 Cracked wheat is a wheat product made from whole raw wheat kernels which are crushed or cut into smaller pieces. There are a large number of uses for cracked wheat, and the food makes a popular dietary supplement in many cultures. Many grocery stores carry cracked wheat, which should be stored in a cool dry place until use so that it does not go rancid. If not used within one year, cracked wheat should be discarded.
A similar product, bulgur wheat, is also made by cracking wheat kernels. Bulgur, however, is made from wheat kernels which are steamed and toasted before cracking, so that they develop a rich, nutty flavor. Bulgur also requires minimal cooking, since it is already partially cooked. Cracked wheat, on the other hand, uses whole raw wheat berries. Numerous other types of cracked grain are also available for use in various recipes and animal fodder.

Because cracked wheat is made from whole wheat berries, it carries a great deal of nutrition and fiber since it includes the fiber and nutrient rich outer branand germ of the wheat. 

For this reason, it is often added to healthy diets, especially those eaten by people who are concerned about heart health. Other whole cracked grains may be used as well, for variation in flavor and nutrition.

You’ll rarely see the husk on whole wheat berries. Besides being inedible, the hulls tends to drop off as the wheat is being harvested.

A whole grain is just what it sounds like– all of the grain.  It can be a grain of wheat, oats, barley, or any cereal plant, but to call it whole grain means you do not remove part of the grain before you crack, roll, grind or eat it.

A grain of whole wheat is similar to an egg.  It has a husk for a carton, bran for an eggshell, endosperm for egg whites, and germ for the yolk.  The husk must be removed, but the rest of the grain is important!  The bran (eggshell) has lots of fiber and makes you feel full!  Germ (yolk )has fiber and minerals, but is also full of complex carbs, protein, and essential fatty acids, and is an excellent source of vitamins B and E.  Endosperm (whites) is mostly carbs.  White flour is made of only endosperm.  This helps it last longer in your cabinet, but takes away the most healthy parts of the grain !  The great thing about keeping all of the grain is that when mixed with the endosperm, the germ and bran work with it to make a slow burning complex carb– very healthy!

The best way to enjoy it is to grind the whole wheat flour yourself!  Even flour labled “whole wheat” at the store can be missing some of the bran and most of the germ.  The bran and germ cause the flour to go bad sitting on the store shelf, so it sells better without them.  On our farm we use a mill and simply turn the knob any time we want fresh, whole wheat flour.  Watch and see!

Why seek out whole grain products?
The outer layer of a grain is rich in fiber, minerals, vitamins and important phytochemicals like phenols. When a whole grain gets refined, however, it loses this outer layer. Even when manufacturers “enrich” their refined grains, they still don’t possess the full health benefits they once did.
If you choose whole-grain products, make sure the word “whole” is on the label. Multi-grain, seven-grain and bran breads are not necessarily whole-grain products. If the ingredient list on a wheat bread lists only “wheat” and not “whole wheat,” it’s not a whole-grain product.
Of course, there’s more to whole grains than whole wheat.

Get acquainted with some of the other whole grains:

·    Barley: Hulled barley is the true whole grain. Pearled barley, however, which loses both its outer layer and its bran layer, retains most of its whole-grain nutrients and fiber.
·    Buckwheat: If you’re allergic to wheat, buckwheat’s your answer. Kasha, or roasted buckwheat, is a great source of the antioxidant rutin, which benefits circulation.
·    Corn: Look for whole-grain cornmeal at the grocery store.
·    Millet: Very nutritious and easy to digest, millet makes a great hot breakfast cereal.
·    Oats: Easily digested, oats provide B vitamins. Oatmeal and oat bran are excellent for lowering cholesterol.
·    Quinoa: (keen-wah) A high quality protein, quinoa is also high in iron.
·    Rice: Choose brown or wild rice over enriched white rice whenever you can.
·    Wheat: Whole-wheat bread and pasta are widely available. Bulgur wheat is a form of cracked wheat. Wheat germ, although only a part of the whole grain, is an excellent source of Vitamin E.
